Tonight I was in the mood to grill out burgers.  Since we can’t eat bread I love to make these Paleo AIP Portobello Rosemary Garlic Burger Stacks. My daughter loves portobello mushrooms & this is by far her favorite burger.  They are so full of flavor. You won’t even miss the bun! 

Ground Beef

The 1st thing you do is mix 100% grass-fed ground beef with sea salt, garlic powder & chopped fresh rosemary.  I have rosemary growing on my deck.  I love the way it smells & absolutely love it with garlic!

Once you have it all mixed up, shape into 4 large hamburger patties. Since I only needed 3 burgers & had 2 lbs of ground beef I made 6 so we would have leftovers for tomorrow night.  I’m always thinking ahead so that it’s easier the next day.

After you get the burgers shaped, set them aside.

Coconut Aminos

Get out the portobello mushroom caps & line a pan with parchment paper if you have it.  (clean up is so much easier) Remember to remove the stem & scrape out the inside. Drizzle with EVOO, & Coconut Aminos & sprinkle with garlic powder.

Now it’s time to put the burgers on the grill & mushrooms in the oven (or grill if you would like). If you don’t have a grill, a Black Iron Skillet works great or you could get an indoor grill like this one.

I also made Rosemary Garlic Sweet Potato Fries that I put in the oven about 10-15 min before the mushrooms. While burgers are cooking I cook the bacon, slice the avocado & onion.

Ingredients:

 

 

  • 6 slices cooked bacon
  • sliced avocado
  • sliced onion
  • 6-12 leaves of romaine or leaf lettuce, if you are like me I like 2 pcs.

Directions:

  • Preheat grill -for burgers
  • Preheat oven to 400* for mushroom caps
  • Mix ground beef, rosemary, garlic powder, & sea salt. Shape into 6 patties
  • Take mushroom caps, remove stem & scrape insides
  • Drizzle mushroom caps with EVOO, coconut amino’s & sprinkle garlic powder
  • Grill burgers about 6 min on 1st side & 4-5 min on 2nd side depending on how thick your burger is, & how well you want them done
  • Put Mushrooms in the oven & cook until burgers are done. About 10 min
  • Put Lettuce on the plate, add mushroom, burger, bacon, onion & avocado
  • I like to serve with Sweet Potato Fries & Sauerkraut
