Today I was craving chocolate & all I had were some Enjoy Life Chocolate Chips. Not exactly what I had in mind. For True Paleo make sure to use the Hu Brand Chocolate Chips.
I had 3 very ripe bananas that needed to be used so I decided to make some Paleo Chocolate Chip Banana Bread. This turned out so good & yummy. It satisfied my chocolate craving.
This Paleo Chocolate Chip Banana Bread is gluten-free & dairy-free.
Doesn’t that look yummy!
Ingredients:
- 3 very ripe bananas
- 3 lg. pastured eggs (I get mine from a local farmer)
- 1 tsp. vanilla extract
- 3 cups of almond flour
- 1/2 tsp. sea salt
- 1/2 tsp. organic cinnamon
- 1 tsp. baking powder
- 1/4 c. melted coconut oil
- Spray Oil for greasing the pan or use coconut oil
- 1/2 c. Hu Chocolate Chips (Paleo) or Enjoy Life chocolate chips (Paleo Friendly)
Optional:
- Extra Chocolate chips for sprinkling on top (I used dark chocolate)
- 1/4 c.- 1/3 c. Maple Syrup (optional) for extra sweetness (I like to drizzle it on before eating)
- 1/2. c. Organic Chopped Walnuts (optional)

Directions:
- Put all 3 bananas in a large mixing bowl & mash until liquified.
- Add eggs, vanilla & maple syrup (optional) if using & mix
- Add almond flour, sea salt, cinnamon & baking powder to mixing bowl, mix but don’t over mix.
- Add coconut oil, mix but don’t over mix.
- Add chocolate chips & mix but don’t over mix.
- Pour batter into greased loaf pan. Sprinkle chocolate chips on top (optional)
- Bake for 50-60 min.
- Check loaf around 45 min. The bread is done when the center is set.
- Let cool for about 10 min. before removing from the pan.
- Slice, drizzle with Maple Syrup if desired & Enjoy.
