Today I was craving chocolate & all I had were some Enjoy Life Chocolate Chips. Not exactly what I had in mind.

I had 3 very ripe bananas that needed to be used so I decided to make some Paleo Chocolate Chip Banana Bread. This turned out so good & yummy. It satisfied my chocolate craving.

Ingredients:

Optional:

  • Extra Chocolate chips for sprinkling on top (I used dark chocolate)
  • Maple Syrup (optional) for extra sweetness (I like to drizzle it on before eating)
  • 1/2. c. Organic Chopped Walnuts (optional)

This Paleo Chocolate Chip Banana Bread is so easy & delicious to make. A great way to use up over ripe bananas & satisfy those chocolate cravings at the same time. Directions:

 

  • Put all 3 bananas in large mixing bowl & mash until liquified.
  • Add eggs & vanilla, mix.
  • Add almond flour, sea salt, cinnamon & baking powder to mixing bowl, mix but don’t over mix.
  • Add coconut oil, mix but don’t over mix.
  • Add chocolate chips & mix but don’t over mix.
  • Pour batter into greased loaf pan. Sprinkle chocolate chips on top (optional)
  • Bake for 50-60 min. 
  • Check loaf around 45 min. The bread is done when the center is set.
  • Let cool for about 10 min. before removing from pan.
  • Slice, drizzle with Maple Syrup (optional) & Enjoy.

Tips:

  • If you want it sweeter you can add 1/4 c. of Maple Syrup to the mixture before baking. I like to drizzle a little on mine before eating. 
  • Optional add-in – Add 1/2 c. of Chopped Walnuts.
