This AIP Paleo Southern Fried Cabbage with Bacon & Leeks is so easy to make, healthy & delicious.
When I think of Fried Cabbage I think of my Grandfather. He loved Fried Cabbage with Bacon Grease. Well, I did too, until I went through the fat-free stage & quit eating fat.
It wasn’t until I got sick with 3 autoimmune diseases that I started eating food cooked with fat again. This dish is comfort food for me. I can’t believe I ever stopped eating bacon fat. It’s soooo good!
And it is healthy, as long as it is high quality & comes from uncured pastured pork with no nitrates, sulfites, or preservatives. Try to find a local farmer who practices clean organic farming. Of course, you can always sub another fat if you prefer. I won’t judge!

My recipe is a little different than what my grandfather ate. My grandmother used spring onions instead of leeks & no garlic. It was very basic but so delicious. Well, I like to kick things up a notch or two & I love leeks. So I subbed leeks instead of onions. You can totally use an onion or spring onions if you prefer.
Ingredients:
- 5-6 Slices uncured Bacon, sugar-free, (cut into 1 in. pieces)
- 1/2 organic cabbage (remove core & cut into 1 in chunks) save other 1/2 for something else. (I like to make Homemade Sauerkraut with my leftover cabbage)

- 2-3 cloves of garlic minced
- 1 organic leek washed & coarsely chopped or 1 med. onion (coarsely chopped)

- sea salt to taste
Directions:
- Heat large skillet to med heat (I prefer a Black Iron Skillet)

- Add bacon & stir fry bacon until crisp
- Remove bacon with a slotted spoon, set aside

- add leaks or onions, garlic & cabbage to pan with bacon grease

- season with sea salt
- stir-fry until cabbage & leeks are wilted
- Add back bacon & any accumulated juices & stir to combine.
- Serve

- 1/2 organic cabbage (remove core & cut into 1 in chuncks)
- 2-3 cloves of garlic minced
- 1 organic leek coarsely chopped or 1 med. onion (coarsely chopped)
- sea salt to taste
Instructions
- Heat large skillet to med heat
- Add bacon & stir fry bacon until crisp
- Remove bacon with a slotted spoon
- add leaks or onions, garlic & cabbage to pan with bacon grease
- season with sea salt
- stir-fry until leeks & cabbage are wilted
- Add back bacon & any accumulated juices & stir until combined
- Serve

I made the fried okra with bacon & onions. It was delicious!! I will make this again & again, no doubt about it.
