Brussel Sprouts are one of my favorite veggies. These are so easy to make & delicious. Even the pickiest of eaters will like them.

Brussel Sprouts are a vegetable that most people, especially kids, don’t like. I think it’s because they just haven’t tried them roasted with bacon. Everything is better with bacon, right? My teenage daughter will even eat them this way.

Chop onion & 5-6 slices of uncured, no nitrate, pastured bacon.

Mix all ingredients & put in a casserole dish! I’m sorry, but that looks delish! And it’s not even cooked yet!

Wow! Who wouldn’t want to eat that? Yummy! I love to serve this with my AIP Pan Fried Chicken Thighs.
Here is my recipe:
Ingredients:
- 1 bg. (2lb) Brussel Sprouts washed, trimmed & halved
- 5-6 slices of uncured, no nitrate bacon chopped
- 1 med. onion chopped
- 1 Tbs. of minced garlic
- 1-2 Tbs EVOO enough to drizzle & coat
- sea salt to taste
- *optional -1-2 Tbs. balsamic vinegar
Directions:
- Preheat oven to 350 (on convection roast) or 375 on Bake
- Mix all ingredients & put in a baking dish
- Roast for 40-45 min or until golden brown, stirring occasionally

- Roasted Spatchcock Chicken
- Sweet Potato Fries
- Roasted Carrots & Cauliflower

Is the bacon already made when you put it in with everything else? Or do you put the bacon in raw and have it bake with everything?
Hi Mike, Good Question. I put mine in raw. I like to cook all the flavors together at the same time.
