Since going Paleo/AIP, sweet potatoes are a staple around my house! So I’m always experimenting with different ways of cooking them. My families favorite are Rosemary Garlic Sweet Potato Fries! Especially when grilling hamburgers during the summer. They go perfectly with my Portobello Rosemary Garlic Hamburger Stacks!

If your potatoes are not organic, you will need to peel the potatoes, slice lengthwise in half, then cut each half into thin slices. Cut each slice into strips. (they don’t have to be perfect) If you want, you can soak them in water for about 45 min to an hour before cooking. This is optional if you don’t plan ahead like me sometimes, but it does help make them crispier.

If you are fortunate to have rosemary growing on your deck like me, you always have fresh. I love the smell of Rosemary. Probably one of my favorite herbs. You need to strip & chop about 1 Tbs. of fresh Rosemary, or more if you like.

Add EVOO or fat of choice, garlic powder, rosemary & sea salt. If you don’t have fresh rosemary, you can use dried organic rosemary. It’s always better to have fresh but can use dried in a pinch if you have to. Now give it a good toss!

Line your pan with parchment paper (easy cleanup) & spread sweet potatoes in a single layer. Bake at 425* until brown & crispy.

Don’t they look scrumptious! This pairs very nicely with my Portobello Rosemary Garlic Hamburger Stacks & a little homemade sauerkraut.

Ingredients
- 3-4 sweet potatoes
- 1-2 Tbs. fat EVOO, Coconut Oil, Avocado Oil, Red Palm or Ghee (not AIP)
- 1 tsp garlic powder
- 1 Tbs fresh rosemary or 1 – 1 1/2 tsp of dried
- sea salt to taste
Directions
- Peel potatoes, cut into 1/2 in slices & then cut into strips
- Soak in Cold Water for about 45 min to 1 hr. *optional – it makes them crispier! Just make sure to dry them before cooking.
- Preheat oven to 425*
- toss with EVOO or fat of choice, garlic, rosemary & sea salt
- Bake for about 20-25 min or until browning & crispy
- I like to add a little more sea salt when they come out of the oven.
- Serve immediately
Notes:
Personally, I like to add the seasonings when I take them out of the oven or during the last 5 min. so that they don’t get so dried out. Experiment & see which way you like it best.

- Preheat oven to 425*
- toss with the fat of choice, garlic, rosemary & sea salt
