OMGosh! These are soooo good! Of course, anything with bacon is good. That’s why I love this diet! You could totally use Chicken breast but Thighs are so much juicier & tastier.
These AIP Paleo Bacon Wrapped Chicken Thighs are as delicious as they look! Perfect for date night or entertaining & so easy to make. Your guest will think you’ve been in the kitchen all day! Shhh! I won’t tell!
They are AIP, Paleo, Gluten Free, Whole 30, Low Carb & Keto too! Can’t get any healthier than that!
Ingredients:
- 5-6 boneless, skinless chicken thighs
- 5-12 pieces of Nitrate free Uncured Sugar Free AIP compliant bacon
- sea salt to taste
- garlic powder to taste
- onion powder to taste
- 1 Tbs. Fat of choice (I used avocado oil)
- herbs of choice (I like this one) (optional)
Directions:
- Heat oven to 400 degrees. If using a cast-iron skillet heat over med-hi heat 1st. This makes the chicken/bacon browner/crispier & cook faster.
- Pat chicken dry & generously salt chicken on both sides
- Sprinkle both sides with onion, garlic powder & herbs (optional) of choice (I like this one)
- Wrap each thigh with bacon (it may take 2 slices to cover ea. thigh)
- Add each piece of chicken to skillet if using skillet seam side up. Allow to brown for 2-3 min. If using Pyrex, place in pyrex seam side up.
- Turn over each piece of chicken careful to not let the bacon move.
- Transfer the skillet to the preheated oven & bake until the chicken is no longer pink & bacon is crisp. About 20-30 min. or until done.
- If using a pyrex casserole, cook until bacon is brown & crispy (about 1/2 way) then remove from oven & turn over. Put back in oven & brown on the other side until the chicken/bacon is brown & crispy & no longer pink. (About 30-40 min. total)
Tips:
- If you don’t have an iron skillet you can use a pyrex dish, just don’t preheat. It will take a little longer to brown & cook.
- Can also grill these if preferred.
