This AIP Paleo Italian Spaghetti Squash has been a lifesaver for me since starting the AIP Diet.
When I first started the Paleo and then AIP Diet I really missed spaghetti. Actually, any kind of pasta. When I heard about spaghetti squash, I was in heaven.
I was a little intimidated at first, but once I realized how easy it was, I cook it all the time.
Because it is a squash, it has a little sweeter taste than pasta. So, the key to it tasting more like pasta is the seasonings. I add a lot of sea salt & garlic. Yum!
This is my favorite way to make spaghetti squash. You can serve it as a side, with your favorite pesto or sauce. It is perfect with my AIP meat sauce recipe or with my AIP Paleo Mediterranean Chicken.
If you haven’t cooked spaghetti squash before & are a little intimidated don’t be. Here is how to cook a Spaghetti Squash in the oven. Or you can cook it in the Instant Pot in 20 min. if you have one! By far the easiest & best method I have found. I haven’t cooked one in the slow cooker, but I have heard it’s easy to just throw it in & set it to cook while you are away.
Ingredients:
- 1 spaghetti squash (approx 2 lbs)
- 2-3 Tbs. olive oil (or more if you like)
- 1 tsp Organic Italian Seasoning
- 2 tsp. -1 Tbs. garlic powder (to taste, the more the better as far as I’m concerned)
- sea salt to taste
- 1/2- 3/4 c. water
- 1-2 Tbs. nutritional yeast (optional) gives a cheesy flavor
Directions:
- Preheat Oven to 400* or cook in the Instant Pot (I cook in the Instant Pot to save time) (Here are directions for cooking in the oven)
- Cut Spaghetti Squash in half
- Remove seeds with a spoon
- Brush Olive Oil on both halves & sprinkle with sea salt
- Turn face down in the baking dish
- add enough water to cover the bottom of the dish
- Bake for 40-45 min. depending on size.
- Remove from oven when done & let cool for 10-15 min.
- Take 2 forks & shred.
- Put in a casserole dish & mix in olive oil, garlic powder, sea salt, nutritional yeast (optional) & Italian seasoning. (You can use fresh herbs if you like)
- Put back in the oven for about 10-15 min. for flavors to blend

*Tips:
- Start checking the squash after 30 min with a fork. Once it is fork-tender it is ready.
