This AIP Paleo Mediterranean Chicken Dish is one of my favorite go-to dinners! It is an easy & delicious one-pan dish. Who doesn’t love one-pan dinners? I know I do. Clean-up is a breeze.
This recipe is one that my family asks for a lot, especially my husband, and it’s fancy enough for company! Add a salad, green beans, and broccoli or asparagus, and you are good to go! Or add spinach like I do for a more nutrient-dense one-pan dish & you don’t even have to have a side. Perfect for a weeknight dinner. This Mediterranean Chicken dish is so good served over/with Cauliflower Rice or Spaghetti Squash.
I have to confess. I had just had ankle surgery & my husband threw this together while his sister & brother-in-law were visiting. I gave him instructions from a chair near the kitchen. If he can do this, believe me, anyone can. (It might not have been as pretty as if I had made it, but who’s complaining.)

He roasted broccoli to go with it since we were out of spinach. When I cook it, I just put the broccoli or spinach in with all the other ingredients & bake it as a one-pan dish! Saves time & cleanup!
Ingredients:
- 5-6 Organic Chicken Thighs
- 2-3 Tbs EVOO
- 1 onion chopped
- 2-3 cloves garlic, minced
- 1/2 c. kalamata olives sliced
- 2 Tbs. capers
- 1 bag of frozen artichokes or 1 can of artichoke hearts drained & sliced
- 1 tsp oregano
- 2 Tbs fresh basil – optional
- sea salt to taste
- 2 handfuls of fresh spinach or 1 bag of frozen organic broccoli- optional
- optional- can add feta cheese – not Paleo or AIP

Directions:
- Preheat oven to 375*
- Add EVOO or fat of choice to the casserole dish.
- Salt Chicken on both sides
- Add onions, garlic, olives, capers, artichokes, oregano, basil & spinach to the casserole dish.
- Add Chicken on top.
- Bake for 30-40 min or until chicken is done. Juices should be clear. Turn chicken halfway through cooking.

Tips:
- You can cut up the chicken in bite-size pieces & mix.
- If you can’t find artichokes without citric acid (they are hard to find) soak them in water with a couple of Tbs. of vinegar & rinse a couple of times thoroughly. I don’t know if this removes it totally, but it makes me feel better.
- Delicious served over Cauliflower Rice or with Italian Spaghetti Squash

- If you like you can add basil & spinach, stir, & Bake for another 5 min until wilted.
- Delicious served over Cauliflower Rice or Italian Spaghetti Squash

Hi! I’m a little confused. I followed the directions for the first recipe I came to on the page but then after I had added everything to the pan, I saw that the second set of directions and ingredients were slightly different. On the first set of ingredients it says one onion chopped in the second set it says half of an onion. In one set of directions it says to add all the ingredients including the basil and spinach but the second directions say to add that later. It also didn’t mention anything in the first set about browning the chicken so I’m hoping I made this correctly in my layering of everything with the chicken on top. Just thought you might want to know about the recipe discrepancies but I’m excited to try this dish tonight when it comes out of the oven!
Hi Gina! Sorry about the confusion. I did update the recipe & forgot to update on the printable card. Thanks for catching this for me. You really can’t go wrong either way on this recipe. You could cut the chicken in bite-size pieces & mix it all up & would still be great. As far as the onion goes it would depend on the size of the onion. If it is large I would probably put 1/2 of it. If it is small or medium I would put the whole onion. As far as I’m concerned you can’t have too much garlic or onion. LOL Let me know how it turned out & how you liked it. Thanks again!
I would like to make this with chicken that I cooked yesterday for stock. Would the casserole take less time to bake?
Hi Brenda, Good question. I’ve never made it with already cooked chicken. You might want to cook all the veggies for 15-20 min. then add the chicken. You might also want to add a little broth, since it’s already cooked & there won’t be any to cook out of the chicken. Let me know how it turns out.
This was so awesome and easy to make! I left out the feta cheese because hubby is not a fan. He doesn’t like artichokes or olives either but he ate them! We almost licked the bottom of the pan, scraped off the brown bits and everything! I served it with some cauliflower rice laced with preserved lemons.

I fixed this for dinner tonight for the entire family. I have 2 kids that are picky, and my husband doesn’t especially care for Paleo cuisine, However – this was a hit. It was full of flavor, and really just pretty to look at. I added feta cheese to my kids plates – and the entire casserole dish was eaten. This one is a win win!!
