This AIP Paleo Spinach Artichoke Chicken Casserole is so easy to throw together on a busy weeknight or pretty enough for guests! I created this on one of those nights that I didn’t feel like cooking. I had some organic chicken thighs (you could totally use breasts), frozen spinach & artichokes. Hmmm, Sounded good to me. Reminded me of my Spinach Artichoke Dip Recipe!
I pulled out my casserole dish poured some Avocado Oil in the bottom of the dish, put in the veggies & seasonings, added the chicken on top & Voila”! Easy Peasy!!! I put it in the oven & walked away & watched one of my favorite shows. It doesn’t get any easier than that!
Ingredients:
- 6-8 Organic Chicken Thighs
- 2 T avocado oil or Olive Oil
- 1 tsp sea salt
- 1 1/2 tsp garlic granules
- 1 med. chopped onion (or can use frozen) (can omit or use 1/4 for keto)
- 1 pkg. of frozen spinach
- 1 pkg. of frozen artichoke hearts or canned
- 1/4 cup of nutritional yeast
Directions:
- Preheat oven to 400*.
- Add Oil to a Casserole dish
- Add Spinach, Artichokes, Onion, Garlic, Nutritional Yeast & Sea Salt
- Stir to mix
- Season chicken thighs with sea salt & garlic powder
- Add to top of Spinach mixture
- Cook, until Chicken is starting to brown & turn & cook until chicken is brown on both sides & juices, are running clear. About 40-45 min.

Hi. Can you please clarify? Your recipe calls for “Nutritional Yeast”, but the link and your Recommended Products list “Nutritional Yeast Seasoning”. Two different things – which do you use? Thank you.
Great Question! I use the Braggs brand of Nutritional Yeast Seasoning.
Just tried this. Super delicious, I think this will become a favourite. I’ve just started AIP, so always on the look out for quick, tasty dishes. Live that this could be served hot or cold, for lunch, or filled out for dinner.

Can you please share where you found compliant artichokes? I have looked everywhere. Thank you.
Hi Carol, great question. It is very hard to find them compliant. Try the frozen section & if you have a Whole Foods, try there. I use the frozen ones that I can find & soak in vinegar & rinse thoroughly. I’m not 100% sure if this works but makes me feel better. I haven’t had any issues with them. Everyone is different so I would wait until re-intro phase before trying them if you can’t find any compliant ones.
