Do you ever have those nights when you just don’t feel like cooking a big meal? Me too! Well, tonight was one of those nights.
I had some ground beef that needed to be cooked & my husband was like “Why don’t you make hamburger steaks, potatoes & green beans?” I’m like, “No, I want a one-dish meal, and since I’m doing the cooking I get to decide unless you want to cook!” LOL
So off to the kitchen I go to see what I can whip up in a hurry with minimal kitchen clean up. I had some broccoli, onions, & mushrooms in the upstairs freezer. I didn’t even want to walk down to the basement freezer. Yes, it was one of those days.
I keep chopped onions & all kinds of organic vegetables in the freezer for this kind of night. It makes life so much easier. So this is what I made. Sometimes these impromptu dinners turn out to be the best!
This dish is also perfect to double to have leftovers or to send in a thermos for the kiddos for lunch.
Ingredients:
- 1 lb. grass-fed ground beef
- 1-2 Tbs. EVOO, Avocado Oil or fat of choice
- 1 tsp. garlic powder or minced garlic
- 1/2 c. chopped onion (I used frozen)
- 1 pkg. organic frozen broccoli florets (or 1 head of fresh organic broccoli cut up)
- 1 pkg. organic frozen sliced mushrooms or 1 cup. of fresh organic mushrooms sliced
- 1/4 c. coconut aminos or more if you like (to taste)
- 1 tsp. sea salt or to taste
Tools:
- 1 lg. deep pan (I used a stainless pan like this one)
- long-handled spoon (I used a wooden spatula like this one)
Directions:
- Heat Oil in pan on Med-High heat. (Hot but not smoking)
- Add Onions & cook until translucent.
- Add ground beef & break up using spoon or spatula.
- Stirring & cooking until browning.
- Add broccoli, mushrooms, coconut aminos, garlic powder & sea salt.
- Stir & cook (stirring occasionally) until broccoli is tender, about 10 min.
- Serve alone or over cauliflower rice.

Thank you for sharing this recipe. As a dad, I’m the one tasked to cook, clean, fix cars, ect, ect….as a family we are trying to eat more healthy, and eat out less. This dish was easy and tasted great. The beauty of this dish is you can add whatever vegetables you like, such as carrots, and even put in some cashews. I served it over sweet potato glass noodles. This is definitely a keeper.
