I woke up this morning & it was pouring down rain. What a nasty fall day. Makes you want to just stay in bed & watch movies all day.
All of a sudden I started craving something warm & comforting. I thought about soup, but I wanted something heartier & spicy. After being AIP for so long with no tomatoes or nightshade spices, I just wanted Chili. I went online & started searching for Paleo chili recipes.
Everyone loves Chili! It was one of my favorites before going AIP. But, how can you have chili without beans? Since I am back to almost full Paleo now, I just wanted chili!
So, what do you do? Pinterest of course!
I found a couple of “no bean” chili recipes. Hmmm, it is doable. So this is my version of “no bean” Paleo Beef Chili! I hope you enjoy it as much as we did!
Oh, and my daughter requested it for her lunch. That’s a “Win-Win”. I put it in a thermos like this one. (Remember to put hot water in the thermos 1st to heat the thermos before adding the chili. It helps to keep it hot until lunch.) I also packed a container with Grain Free Tortilla Chips.

Ingredients:
- 2 lbs grass-fed ground beef or grass-fed stew beef
- 1-2 Tbs. of Fat EVOO, Avocado Oil, etc… (I used bacon grease)
- 1 lg. onion diced ( I used a purple onion)
- 1 Tbs. of minced organic dried garlic (or 4 Tbs. of fresh minced garlic)
- 6-8 stalks of organic celery sliced in 1/4-1/2 in slices
- 1 6 oz can organic tomato paste
- 2 Tbs. organic chili powder (can add another Tbs. if you like it spicier)
- 1 1/2 tsp. organic paprika
- 1 1/2 tsp. organic onion powder
- 1 tsp. organic garlic powder
- 2 tsp. organic cumin (can add 1 Tbs. if you like more)
- 1 tsp organic black pepper
- 2 14.5 oz. cans. organic Fire Roasted Tomatoes
- 1 qt. bone broth
- 1 c. of diced organic carrots (optional)
Directions:
- Brown ground beef in a large pot or dutch oven.
- Add onions, garlic, spices & tomato paste. Stir & cook until onions are translucent.
- Add celery, tomatoes & broth & whatever veggies such as carrots that you want.
- Bring to a boil, lower heat & simmer for 30-45 min.
Tips:
- Serve with Plantain Chips or Siete Sea Salt Grain Free Tortilla Chips (These are sooo good)
- Top with green onions, chopped avocado, sliced jalapeno & or fresh cilantro etc…
- Serve over Cauliflower Rice or add cauliflower florets.
I served the Easy Paleo Beef Chili with Siete Sea Salt Grain Free Tortilla Chips. If you haven’t tried these, OMG, sooo good!
*Directions for Instant Pot:
- Brown ground beef on saute setting.
- Add onions, garlic, spices & tomato paste. Stir & cook until onions are translucent.
- Add celery, tomatoes & broth.
- Put the lid on & turn the vent to sealing position.
- Set to Bean/Chili setting.
- When done either Natural Release or Manual Release, depending on if you are too impatient to wait!
Tips:
- Serve with Plantain Chips or Siete Sea Salt Grain Free Tortilla Chips (These are sooo good)
- Top with green onions, chopped avocado, sliced jalapeno & or fresh cilantro etc…
- Serve over Cauliflower Rice! Yumm!

Another tip I told my e-mail subscribers is that if you want it, even more, nutrient dense, try adding chopped zucchini, carrots or throw in a couple handfuls of spinach. I’ve found with my daughter that is a good way to get in more veggies!
