Who doesn’t love Cream of Broccoli Soup? Especially when it is made in less than 20 minutes and so healthy. It is Paleo, AIP, Whole 30, Keto/Low Carb & Dairy Free! Cant’ beat that!

I had an accident a couple of weeks ago & broke my jaw & dislocated my temporomandibular joint. Yeah, I know, not my best moment! I had to have surgery to repair it a week ago. This has definitely not been fun. I’ve lost about 7-8 lbs. I definitely would not recommend this diet!

Anyhow, I have to have a very soft diet. I’ve been eating Mashed Cauliflower (AIP), Mashed Potatoes (Paleo), Cream of Chicken Soup (AIP), Cream of Tomato Soup (Paleo) & Blueberry Smoothies (Paleo) for breakfast thanks to my daughter. Recipes to come soon. (Hopefully)

The only problem is, I have been craving something green. So today I was really hungry & was out of everything that my daughter had premade. I’m feeling some better and am finally able to do some cooking for myself. 

So off to the freezer I go. I had 2 pks. of frozen broccoli so I decided to make a healthier dairy-free version of Cream of Broccoli Soup. I had some Bone Broth in the pantry that I had canned this summer & I really felt that I needed it too. 

This soup was so good & comforting that I had 2 bowls of it. 

 

Ingredients:

  • 2 pks. of frozen broccoli florets or 1 head of broccoli chopped (remove core) 
  • 2 c. Bone Broth (learn how to make it here)
  • 1 Tbs. of minced Garlic 
  • 1 med. onion chopped 
  • Sea salt to taste
  • About 1 c. of Coconut Milk (AIP),  Almond Milk (Paleo) or Cashew Milk (Add more as needed)
  • 1 Tbs. EVOO or Avocado Oil
  • 4 scoops or 4 Tbs. Collagen (optional) for extra nutritional benefits
  • 1-2 Tbs. Nutritional Yeast (optional) for extra nutritional benefits

Tools Needed:

Directions:

  • Put EVOO or Avocado Oil in Pan on Med-Hi heat
  • Add onions & minced garlic & saute until translucent.
  • Add Bone Broth, broccoli, sea salt
  • Bring to boil on Med-High Heat
  • Turn down to low, add lid & simmer for about 10 min. stirring occasionally until broccoli is tender.
  • Remove from heat 
  • Pour into Blender or Food Processor & blend
  • Add Coconut/Almond/Cashew milk to desired creaminess & blend
  • Pour back into pot & bring to simmer over Med heat.
  • Remove from heat, stir in collagen &/or nutritional yeast if adding.
  • Serve

  2. Add Bone Broth
  3. Add Broccoli, sea salt, garlic powder & onion powder
  4. Bring to boil on Med-High Heat
  5. Turn down to low, add lid & simmer for about 10 min. stirring occasionally until broccoli is tender.
  6. Remove from heat
  7. Pour into Blender or Food Processor & blend
  8. Add coconut milk or almond milk to desired creaminess & blend
  9. Pour back into pot & bring to simmer over Med heat.
  10. Remove from heat, stir in collagen &/or nutritional yeast if adding
  11. Serve
