When I was a kid my mother used to make this hamburger & potato soup that was very similar to this. She used onions instead of leeks & potatoes instead of yucca and water instead of broth. After I became an adult I would make the same soup with an addition of carrots & spinach to add more nutrients.

It wasn’t until I started the AIP diet that I heard of yucca & decided I would try it. It is a very ugly intimidating veggie. Don’t let it intimidate you. All you need is a good veggie peeler like this one

I always double this recipe so we can eat it all week or can freeze it in individual servings for later.

Ingredients:

  • 1 lb of grass-fed ground beef
  • 1-2 Tbs. of EVOO or fat of choice
  • 1 leek (chopped)
  • 1 med yucca (peeled & chopped)
  • 2-3 cloves of minced garlic or 1 tsp of garlic powder (or more if you like)
  • 1 1/2 -2 quarts of bone broth
  • sea salt to taste
  • sliced carrots (optional add-in)
  • 1-2 c. fresh spinach or greens such as kale (optional add-in)

Directions:

  • Brown the ground beef in EVOO or fat of choice.
  • Add leeks, sea salt, & garlic, cook, until leeks are soft
  • Add yucca & bone broth (if adding carrots add now)
  • Bring to boil & simmer until yucca is soft (if adding spinach add during the last 5 min.)
  • Serve

Tips:

  • Can sub Potatoes if not AIP.
  • If Keto, sub cauliflower florets.
  • Add a couple of handfuls of spinach or kale for added nutrition. Add in the last 5 min.
  • Add a cup of sliced carrots for added nutrition.

    Renee, which type of bone broth did you use for this recipe (beef or chicken)? I’m really excited to try this recipe and will likely use beef broth myself, but I was just curious what you used. Thanks.

      Hi Monica, I think I used whatever I had made at the time which was probably a combo. I do this most of the time. I save my bones in the freezer in a gallon ziplock bag until I have enough to make the broth. It’s usually a mixture of organic chicken & grass-fed beef & pastured pork. Let me know how it turns out! You could also use ground chicken or turkey too!

    This is a winner for my nine year olds which speaks volumes. I decided to try AIP just because I wanted to lose weight and feel better. It worked on both fronts; and my husband also lost a ton of weight and the kids got so many more veggies in their diet this way. Thank you for a delicious recipe. I use sweet potatoes instead of yucca. Yummy!
