This Paleo Cauliflower Leek Soup is so easy to make (which I love) & so tasty! You can double this recipe for a larger crowd or for having leftovers for later. It also freezes well.
This Cauliflower Leek Soup has become one of my family’s favorites. I hope you enjoy it.
Ingredients:
- 4 Tbsp EVOO, Bacon grease, or Avocado Oil (I used bacon grease)
- 2-3 leeks, white and light green parts only – sliced thin
- 1 1/2 tsp. of minced garlic
- 1 head organic cauliflower, broken into florets
- 4+ cups chicken bone broth (enough to cover the cauliflower) I make my own. (use vegetable stock for vegan)
- 1 can of coconut milk (remove the water & only use the cream, may have to refrigerate to separate)
- 1/4 -1/3 c. Nutritional Yeast (optional, this gives it a “cheesy” taste & lots of B vitamins)
- Sea Salt to taste
- Add scallions, chives, bacon pieces, or parsley for garnish (optional)
- (optional) 1/8 tsp ground nutmeg (omit of AIP)
Tools:
- Large Soup Pot
- Immersion Blender, Food Processor, or Blender
- Large Spoon
- Knife
- Cutting Board
Directions:
- Add bacon grease or EVOO to a large pot over medium-low heat.
- Add sliced leeks and cook until softened. Stir in the cauliflower, and bone broth, then season with salt.
- Bring to a boil, then turn down the heat to a light simmer. Cover the pot and simmer for 15-20 minutes, until tender.
- Remove from heat and let cool.
- Transfer soup in batches to a blender or food processor and puree transferring pureed soup back to the large pot, or use an immersion blender right in the pan (this is what I do),
- Add coconut milk.
- Add nutmeg (omit if AIP) and more salt if needed.
- Garnish with any of the garnishes written above.

Tips:
- This soup is easily made vegetarian/vegan by substituting vegetable broth for the bone broth & using EVOO or Avocado Oil instead of bacon grease.
- Freezes well!
- If the soup is too thick, add more chicken bone broth or water.
- Can add 1 chopped potato with cauliflower. (not AIP or Keto)
- I keep these bacon bits on hand when I don’t want to fry some up.
