Fermented Cherry Tomatoes

These Fermented Cherry tomatoes are so easy to make & delicious!  I found some organic cherry tomatoes at my local grocery store & wasn’t able to use them so I decided to ferment them. I hate letting veggies go to waste. It’s another great way to preserve tomatoes.  

I wasn’t sure how they would turn out, but they were awesome! 

I like to serve them on salads, as a side dish mixed with chopped cucumber & onions, or as an appetizer. Think Charcuterie Board!

 

Fermented Cherry Tomatoes

The first batch I made was red cherry tomatoes. I added some garlic & some spices. They turned out so pretty.

What makes these fermented cherry tomatoes different from other ferments is that the carbonation caused by the fermentation process builds up inside the tomatoes. The tomatoes have a tangy fizzy taste that explodes in your mouth.  I love to serve them on my charcuterie boards along with my Fermented Pickled Okra.

 

Fermented Cherry Tomatoes

For the second batch, I used mixed red & yellow cherry tomatoes. I added garlic, some spices & some sliced onions. Look how pretty they turned out. 

I like to serve these with chopped cucumber. I mix them all & refrigerate for about 30 min to 1 hour before serving. So delicious!

Ingredients:

  • Cherry Tomatoes (enough to fill whatever size jar you have, I used quarts) Make sure they are firm & not soft or they will turn out mushy.

Brine:

  • 2 Tbs. Sea Salt (Do not use table salt)
  • 1 quart of Filtered Water (I love my Berkey) Tap Water contains Chlorine which can kill the microbes necessary to ferment food. 

Optional Spices:

  • any spices you might like (optional) I added garlic, sliced onions thyme, oregano, basil & peppercorns to one of my jars. (I love greek salads & thought this would be great on them) 

*I don’t usually measure the spices. I just add what I think is the right amount. I prefer fresh if I have them but use dried if not.

Use your imagination!

Tools Needed:

Directions:

  • Wash Jars with Hot soapy water. Rinse well.
  • Rinse Tomatoes.
  • Use firm ripe tomatoes. If they are soft put them aside for another use.
  • Add Tomatoes to Jar leaving 1 in headspace.
  • Add desired spices
  • Pour Brine over tomatoes until completely covered. 
  • Use weight if needed.
  • Put the lid on & tighten but not too tight. If using a Fido jar, close the lid. 
  • Place in a cool dark area (no direct sunlight) for 4-7 days burping daily as needed. 
  • Taste after about 3 days & ferment longer if needed. 
  • Will keep in the fridge for several months.

Ingredients

  • Cherry Tomatoes
  • 2 Tbs. Sea Salt
  • 1 Qt. Filtered Water
  • Optional: Spices
  • Optional: Sliced Onions

Instructions

  1. Wash Jars with Hot soapy water. Rinse well.

  3. Use firm ripe tomatoes. If they are soft put them aside for another use.
  4. Add Tomatoes to Jar leaving 1 in headspace.
  5. Add desired spices
  6. Pour Brine over tomatoes until completely covered. 
  7. Use weight if needed.
  8. Put lid on & tighten but not too tight. If using Fido jar, close lid. 
  9. Place in a cool dark area (no direct sun light) for 3-6 days burping daily as needed. 
  10. Taste after about 3 days & ferment longer if needed. 
  11. Will keep in fridge for several months.
