AIP, Paleo, Whole 30, Gluten-Free

This Hamburger & Purple Cabbage Soup soup is super easy, delicious & nutrient-dense! Perfect for these busy Fall/Winter weeknights when you are busy & want a super healthy quick dinner.

I had ankle surgery recently, & my husband had to take over the kitchen.  So this past week, he was getting pretty tired of cooking & I told him to make a pot of soup. He liked the idea of one-pot & would last for leftovers most of the week.

Basically, we looked in the fridge & freezer to see what we had on hand. We came up with grass-fed ground beef, a head of purple cabbage, bone broth & some frozen organic veggies. I don’t know about you but I even keep chopped frozen onions in the freezer for this kind of night, just to save time.

This turned out to be so colorful, pretty & delicious, perfect for this beautiful fall weather. What is it about Fall that makes you want to have soup? Well, this one sure fits the bill. 

Ingredients:

  • 1 lb. grass-fed ground beef
  • 1 c. of chopped onion (I used frozen)
  • 1-2 cloves of minced garlic or 1 Tbs. of organic minced garlic
  • 1/2 to 1 sm head of purple cabbage (chopped)I
  • 1 – 1 1/2 c. of chopped carrots (I used organic frozen)
  • 1 – 1 1/2 c. of green beans (I used organic frozen) (reintro for AIP)
  • 1/3 c. of coconut aminos (optional)
  • 1 T of dried seasoning of choice (I used this)
  • Bone Broth 1-2 quarts (enough to make it as soupy as you want)
  • 1-2 T. EVOO, fat of choice
  • sea salt to taste
  • 1-2 Tbs. ACV (optional)

  • you can double this recipe & have it for the whole week or freeze some for later!

Cook Time 30 minutes
Total Time 40 minutes

Ingredients

Instructions

  1. Preheat Soup Pot to med heat
  2. Add EVOO or fat of choice
  3. Add onions, garlic & saute for just a min.
  4. Add ground beef, sea salt & brown.
  5. Add cabbage, carrots, green beans, coconut aminos, dried seasonings, ACV & Bone Broth
  6. Simmer for about 30 min. or until veggies are done
