I was looking for a ground beef dish that I could make super fast but also wanted tons of flavor. Something that didn’t have tomatoes, you know, Spaghetti & Meat Sauce, Soup, or Paleo Chili, the usual go-to’s!
So, I came across this recipe for Korean Ground Beef but it wasn’t paleo, so I decided to try it & make it Paleo. It was perfect! My husband, daughter & her boyfriend loved it! That’s a win-win!
You can 1/2 the recipe if you want, but I like to make enough for leftovers, as you know.
This makes about 6-8 servings, depending on how big your servings are! My husband & the boyfriend usually eat at least 2 servings! They’re big boys!
Paleo Korean Ground Beef
Ingredients:
- 2 lbs grass-fed ground Beef
- 6 Garlic cloves, peeled and minced
- 1/2 cup Coconut Aminos
- 2-4 Tbs Raw Honey to taste (Leave out for Keto & Whole 30)
- 1-2 Tbs. Sesame Oil (Use Olive Oil or Avocado Oil for AIP)
- 3-4 inch long pc. of fresh Ginger, grated (or 1 tsp. ground Ginger)
- A pinch or two of Red Pepper flakes (to taste) optional (Leave out for AIP)
- Cauliflower rice (Recipe below) (or Lettuce leaves if you want to make wraps)
- Toasted Sesame Seeds, for garnish (Leave out for AIP)
- 5-6 Green Onions or Scallions, thinly sliced for garnish
- sea salt to taste
Directions:
- Brown beef and minced garlic in a preheated skillet.
- Mix honey, coconut aminos, sesame oil, grated ginger (or ground ginger), and red pepper flakes (if using). If you can use fresh ginger it adds a lot of flavor. Pour sauce over the beef and mix well. Add sea salt to taste. Cook just until everything is heated through.
- Serve on top of cauliflower rice (or use with lettuce wraps, if preferred).
- Garnish with sesame seeds and sliced green onions. Enjoy!
Cauliflower Rice
Ingredients:
- 1 head of cauliflower, riced (read here how to make Cauliflower Rice)
- 1 Tbs of minced garlic
- 1/2 c. of chopped onions
- 1-2 Tbs of olive oil or avocado oil
- 1-2 Tbs bone broth or water (make your own or buy it here)
- sea salt
Directions:
- In a separate pan, preheat with oil on med-high heat (but not smoking)
- Add onions & garlic, saute until onions are translucent
- Add cauliflower rice & sea salt & saute until done (6-8 min.)
- Add bone broth or water as needed.
*Tips:
- Use frozen cauliflower rice to make it even faster!
- Use leftovers to make lettuce wraps for a quick lunch!

I made this last night and it was delicious! We are starting the AIP diet this week and this was my first attempt at an AIP dinner. My husband has been dreading the diet thinking there won’t be anything good for him to eat and he loved this meal. He was shocked it was AIP compliant.

This dish is fantastic! Cooked it twice now with dark ground turkey. Added Red Boat Fish sauce and roasted sliced mushrooms. Per family request – it’s staying in the weekly rotation.
