I am always looking for new ways to use fermented veggies and Paleo Sauerkraut Salad is a great one! This is another way to get your family to eat more of this gut healing fermented sauerkraut.

Of course, if you don’t have any made you can buy the Bubbies Brand. It is the only one I know that has not been processed or has nasty ingredients.
This Paleo Sauerkraut Salad recipe is super easy & delicious. It is a perfect companion for pork. A great alternative to slaw.
Not only is it delicious, but a beautiful dish to take anywhere.
It is the perfect side dish for barbeques or potlucks & pairs perfectly with my Portabello Rosemary Garlic Hamburger Stacks!
Your guests will be so impressed, even if they “say” they don’t like sauerkraut. “Shhh” I wouldn’t even tell them that it had sauerkraut in it! That can be our little secret!
Ingredients:
- 1 qt. of sauerkraut or Bubbies Brand
- 1/2 c. grated carrot
- 1 c. chopped celery
- 1/2. c sweet onion, chopped
- 1 c. chopped bell pepper (I did 1/2 c. red & 1/2 c. yellow) omit for AIP (can sub chopped apple for AIP)
Dressing:
- 1/4-1/2 c. raw honey (to taste) (leave out for vegan & sub. with maple syrup)
- 1/4 olive oil
- 1 c. raw Apple Cider Vinegar
- sea salt to taste
AIP Option
1 med. apple chopped (Use in place of peppers for AIP)
Directions:
- In a small bowl whisk together all dressing ingredients
- In a large bowl mix together all other ingredients, pour dressing to coat.
- Refrigerate a few hours before serving. Preferably 12-24 hours before serving.

Note:
- This Paleo Sauerkraut Salad can be refrigerated indefinitely according to some sources. Personally, I would only keep for no longer than 2 weeks (if it lasts that long).

Paleo Sauerkraut Salad

Ingredients
- 1 qt. of sauerkraut
