It’s summertime around here & that means grilling & salads! One of my all-time favorite salads is Broccoli Salad. So I had to come up with my own Paleo version of it. I also substitute dried cranberries for the raisins. I just like them better!
This Paleo Broccoli Salad is perfect for picnics, grilling & potlucks! I love to toss in some leftover rotisserie chicken for a delicious lunch the next day!

Ingredients:
- 1 head of organic broccoli – chopped into small pieces
- 1/2 red onion chopped
- 1/2 c. organic dried cranberries (or raisins)
- 1/4 c. organic sunflower seeds
- 4-6 slices uncured bacon, cooked and crumbled

Dressing:
- 1/2 c. Paleo Mayonnaise or Homemade Mayo
- 1 1/2 Tbs Apple Cider Vinegar
- 1 Tbs. of Raw Honey
- sea salt to taste (just a dash or two)

Directions:
- Rinse broccoli & trim stalks. Cut bite-size size pieces
- In a large bowl, combine broccoli, red onion, cranberries & sunflower seeds.
- In a med. bowl, whisk together mayonnaise, vinegar & honey. Season with sea salt if desired.
- Pour the dressing over the broccoli mixture and stir to combine.
- When ready to serve, stir in the crumbled bacon & serve.

Tips:
- Cook bacon in the oven while prepping the salad.
- Toss in some shredded or chopped chicken for a delicious complete meal!
