This Paleo Cranberry Chicken Salad has become one of my family’s favorite, especially during the summer.  

My husband & daughter like it red grapes the best, but it is hard to find organic grapes where we live, and I refuse to buy non-organic grapes, so my go-to substitute is organic dried cranberries, especially during the holidays. A perfect way to use up that leftover turkey!

The cranberries or grapes add just the right amount of sweetness & color.

If you are able to buy an organic rotisserie chicken, this will save you a ton of time!  I love to make Cranberry Chicken Salad using leftover rotisserie chicken. 

If not, you can put a whole chicken in the Instant Pot for about 18-20 min. depending on the size of the chicken. I like doing it this way because I can buy an organic chicken & make my own. 

If you don’t have an Instant Pot, you should get one! It saves me so much time! By far my favorite kitchen appliance! I absolutely can not live without it!

I even take it with me when we go to the beach so that I can make chicken salad for the week. I don’t know about you but I get so tired of eating out.

After the chicken is cooked & cooled I take the chicken off the bone & chop. I like to use red onion because I like the color.

You could definitely use a sweet onion if you want.

Next, add the celery and those beautiful cranberries or if you are like me & can find organic grapes, chop those up & use them instead.

I actually prefer grapes! It is my favorite way to make it! Of course, leave out for Keto.

If you can have walnuts, they are a great optional add-in! But they are not AIP.

Add the homemade mayo. I prefer homemade. Here is my recipe.  But if you prefer you can use Primal Kitchen Mayo! This is my favorite brand. If you would rather buy Mayo instead of making it this is a very clean brand. I use it all the time. 

Neither of these is AIP. If you haven’t reintroduced eggs then use an avocado mixed with avocado oil for AIP modification.

Then, mix it all up!  If it’s a little dry, just add more mayo or a little Avocado Oil.  Isn’t that beautiful! It tastes as good as it looks!

I like to serve it up with sliced cucumbers or plantain chips. My husband prefers the Simple Mills Sea Salt Paleo Crackers.

Ingredients:

  • 1 whole cooked organic chicken chopped/shredded (try cooking in the Instant Pot for faster cooking)
  • 1/2 med. red onion finely chopped
  • 4-5 organic celery stalks finely chopped
  • 1 5 oz. bag dried cranberries or 1-1 1/2 c. red grapes chopped (leave out for whole 30, low carb or keto)
  • 1 c. of Primal Kitchen Mayo or homemade mayo– (use avocado mayo or a whole avocado if AIP)
  • sea salt to taste
  • optional- 1/2 c. chopped walnuts– omit for AIP

Instructions

  1. Put chopped chicken in large bowl.
  2. Add onion, celery, cranberries, mayo, & sea salt.
  3. Mix well. If too dry, add more mayo or olive oil.
  4. Serve with sliced cucumber or plantain chips if AIP or if not try Simple Mills Sea Salt Crackers!

Notes

Serving suggestions:

Serve with plantain chips, sliced cucumber, or on a bed of lettuce.

      You are welcome Hollie! If you can find organic grapes, it is even better. I also add walnuts sometimes! Very tasty! Hope you enjoy! Oh, & I do love this mayo. I prefer homemade, but love the convenience of this! The only one I buy!
