Paleo Egg Salad in the Instant Pot! No Peeling eggs! Seriously!
Who doesn’t love egg salad?
My daughter loves it! Egg Salad is one of her favorite things to take for lunch. During the school year, I pack it in her thermos for lunch. The mornings are so much easier when I make it the night before. I just put the egg salad in her thermos the night before & the next morning all I have to do is put the thermos in her lunch box with some fruit & paleo crackers!
I don’t know who came up with this idea, but they are a genius! Making Egg Salad has never been easier. You don’t even have to peel the eggs! What? This is brilliant!
Crack the eggs & put them in a glass bowl & set the Instant Pot for 6 minutes. No more peeling! Easy Peasy!
Ingredients:
- 8 pastured eggs
- 1 c. water
- 1/2 c. Homemade Paleo Mayo or Primal Kitchens Mayo
- 1/2 tsp. mustard (optional)
- spray oil (my favorite) or oil of choice (olive, avocado etc…)
- sea salt to taste
- black pepper to taste (optional)
Tools Needed:
Directions:
- Pour water in the bottom of Instant Pot (in the inner stainless pot)
- Spray oil in the glass bowl or wipe with oil (for non-stick)
- Break eggs one at a time in a glass dish
- Put Pyrex dish with eggs inside the inner stainless pot in the Instant Pot
- Turn on manual for 6 minutes
- Manually release pressure
- Be careful & remove pyrex dish from Instant Pot
- Use a silicone spatula to go around the edge to remove eggs & place on a plate or cutting board
- Slice into strips & chop
- Put back in Pyrex dish & add mustard, salt, pepper & any optional add in’s you prefer, & stir. I like mine pretty simple.

Serving ideas:
- Serve with paleo crackers or paleo bread, or just eat it any way you like!
- Perfect in a thermos for lunch!
