Its summertime & zucchini is abundant! I have tons of it, (thanks to my dad), so I decided to make Stuffed Zucchini Boats.
The 1st thing you want to do is brown the ground beef with garlic & onions. Add everything else except spinach & simmer for about 10-15 min. Add spinach & let wilt.
That looks so yummy!
While the meat is browning, cut your zucchini in half lengthwise & scoop out the seeds. (You can put the seeds in your meat sauce while cooking if you want) I hate wasting food.
Brush your zucchini with EVOO, & sprinkle with garlic powder, sea salt & Italian seasoning. While meat sauce is simmering, bake or Grill for about 15-20 min or until desired brownness (but not mushy). When done, stuff with meat mixture & add desired toppings.
I topped mine with chopped avocado, (why not?) I had some fresh collards that my dad had brought out of his garden, so I served those on the side. Yum. Probably not the greatest combo, but hey, when your dad brings you fresh veggies, you go with it!
The Stuffed Zucchini Boats would be perfect by themselves or with a side salad or fruit.
This is such a versatile recipe. Use your imagination!
Ingredients:
- 3 med to large zucchini
- 1 Tbs EVOO
- about 1 tsp. of garlic powder
- 1 Tbs. Italian Seasoning
- sea salt to taste
- 1 lb grass-fed hamburger
- 1 Tbs EVOO
- 1 sm onion chopped or 1 sm leek sliced (optional) I just happen to have one that needed using
- 1 Tbs. minced garlic
- 1/2 cup olives, sliced
- 1 sm container of fresh sliced mushrooms or 1 sm can of organic sliced mushrooms
- 1 sm bag of baby spinach
- ¼ cup nutritional yeast (optional)
- sea salt to taste
- chopped avocado for topping (optional) or fresh basil
Directions:
- Preheat Oven to 400* or preheat grill if grilling.
- Brown ground beef, onions, & garlic in EVOO
- Add sea salt, mushrooms, olives, & nutritional yeast simmer for about 10 -15 min
- Add spinach & stir, cook, until wilted
- While meat is browning, cut the zucchini in half lengthwise and scoop out the inside insides
- To help them lay flat, you can cut a piece off the bottom of the “boat” to create a flat surface
- Spread a light layer of EVOO, sea salt, garlic powder, & Italian Seasoning inside each zucchini
- Bake or Grill for 15-20 minutes, or until zucchini is tender (but not mushy).
- Top with meat mixture
- Top with fresh basil (optional) or avocado and serve. (I love avocado on everything)

Tips:
- You can put the insides of the zucchini that you scrape out in your meat mixture when cooking. (I hate wasting food)
- If Paleo, you could also add a can of tomatoes.
- If not Paleo or AIP, could add cheese topping during the last few minutes to melt. (I miss cheese)
