How would I ever be able to have my favorite Italian dishes without pasta?
This was one of the first things I thought after going Paleo AIP.
When I heard about Spaghetti Squash, I just had to try it.

You want to cut the Spaghetti Squash in half & scoop out the seeds.
Brush EVOO all over the inside of the spaghetti squash & sprinkle with sea salt. Add a little water in the bottom of the casserole dish & turn the spaghetti squash upside down to bake.

Cook on 400* for about 35-45 min. Keep a check on it. When you can easily insert a fork into the skin it is done.
Take a fork & gently pull strands into a bowl. Add extra EVOO & season as desired. The secret is to season it well so it’s not as sweet.
I like to add EVOO, sea salt, lots of garlic powder, & Italian seasoning. Fresh herbs are my favorite! You can try my recipe for Italian Spaghetti Squash.

Looks just like spaghetti! Yum! This is great as a side dish or serve it up with my Paleo AIP Meat Sauce or Mediterranean Chicken Bake.

- Preheat Oven to 400*

- Place squash upside down
- Bake for 35-45 min depending on the size of the squash
- Squash is done when you can easily insert a fork
*Tips

- If you cut the squash in half rather than lengthwise you have longer noodles (more like pasta)

This was perfect. I made spaghetti squash for the first time and decided to use this recipe because I liked the idea of longer noodles and you only have one cut to make. I brushed the halves with avocado oil and sprinkled on salt, pepper, and garlic powder. Both halves were done perfectly in 45 mins. This is a great way to cook spaghetti squash.
