Oh, How I use to love Pasta! Well, Pasta doesn’t love me.
Have you ever had Zucchini Noodles? Well, neither had I until after going Grain Free. Since there has been a ton of Zucchini’s around here, we have made use of my Spiralizer. I would say that my Spiralizer gets used almost as much as my Instant Pot. The Spiralizer is in my Top 5 Kitchen Must-Have List!
Of course, you can Sprialize just about anything. Sweet Potatoes, beets, cucumbers, you name it, it can probably be spiralized. Get the kids involved. They love
making all those pretty curly noodles. My daughter loves them. She actually prefers Zucchini Noodles over Spaghetti Squash.
Take your Zucchini & put in the Spiralizer. Crank the handle & out comes the noodles. This is the fun part. Let your kids help! A sure way to get them to eat their veggies! You can also make noodles out of sweet potatoes or any other root vegetable too!
Zucchini has a high water content, so if you are going to be cooking them, add sea salt to them & put in a strainer like this one & drain for 30 min. to an hour. This will release most of the water from the zucchini.
Zucchini Noodles are so versatile that they can be used raw in salads or sauteed.
We like to saute them in EVOO with minced garlic & serve with my meat sauce recipe (minus the spaghetti squash of course). My daughter loves to serve them up with shrimp.
Serving Suggestion

Ingredients:
- 2-3 Zucchini
- sea salt
- EVOO
- minced garlic or garlic powder
- Italian seasoning or fresh herbs *optional
Directions:
- Spiralize Zucchini with Spiralizer
- Sprinkle with sea salt
- Let sit for 30 min to 1 hour in a strainer over a bowl
- Drain water & place noodles on paper towels to dry
- Heat Skillet over med heat
- Add EVOO & garlic. Saute for about a minute
- Add Zucchini Noodles, Italian seasoning or fresh herbs & saute for 2-3 min.
- Serve with a sauce of choice.

- Your favorite Pesto Sauce
- Sauteed with EVOO & Garlic
- Add Sauteed Shrimp
