This Roasted Spatchcock “Butterflied” Chicken is one of my favorite ways to make chicken. It’s much easier than you think.
I love it because it takes less time to cook & the skin is crispier all over instead of just on the breasts. I also love that it is pretty enough for entertaining. I like to make 2 at a time so that I can have lots of leftovers.
If you have followed me for a while you know I’m all about batch cooking & leftovers. This is perfect for the Paleo AIP Diet. It is also Whole 30 & Keto.
Ingredients:
- 1 whole organic chicken
- 1-2 Tbs. EVOO
- Sea Salt to taste
- 1 tsp. Garlic Powder
- 1 tsp. Onion Powder
- 1 tsp. Herbs of choice (This is my favorite) optional
Tools:
- Roasting/Broiler Pan (I use the broiler pan that came with my oven)
- Kitchen Shears
Directions:
- Preheat oven to 400* on Convection Roast or 425* on regular bake.
- Using Kitchen Shears, cut the chicken down the back from neck to tail bone
- Remove the backbone so that you can spread the chicken open. (I like to roast the backbone & use to make bone broth later)
- Drizzle the entire chicken with olive oil.
- Sprinkle with Sea Salt, garlic powder, onion powder & optional spices of choice on both sides of chicken.
- Place breast side up on Roasting Rack & cook for 45 min to 1 hour or until golden brown & juices are running clear
