OMG! These Paleo Almond Butter Cups are probably the easiest thing I have ever made! So easy & delicious!

Once you make these you will never buy those yucky Reeces again!

My daughter’s boyfriend told me they were even better than the store-bought kind & asks for them pretty much every time he comes over!

That’s a pretty good compliment coming from a non-paleo teenager!

Ingredients:

Almond Butter

 

Tools needed:

 

Directions:

  • Melt Hu Chocolate Chips or Enjoy Life Chocolate Chips with coconut oil (optional) in the microwave or on the stove in a small pan. Stirring frequently.
  • Mix almond butter in a separate bowl with honey (optional) & a dash of sea salt.
  • Line mini muffin pan with liners
  • Put about 1 tsp of melted chocolate in the bottom of the liner (just until it covers the bottom, not too thick)
  • spoon a small amount of almond butter on top of the chocolate
  • cover almond butter with melted chocolate

  • sprinkle with sea salt (optional)
  • put in the fridge for about a 1/2 hour to cool.
  • enjoy! makes about 24 pieces.

Instructions

  3. Line mini muffin pan with liners

  5. Spoon a small amount of almond butter on top of the chocolate
  6. Cover almond butter with chocolate
  7. Sprinkle with sea salt (optional)
  8. Put in the fridge for about a 1/2 hour to cool.

      Hi Doylenn, You are correct. They were the cleanest chips available at the time this post was written. This used to be the only clean brand to buy other than making them yourself. So it is a Paleo friendly recipe. Since writing this post I use the Hu brand which is Paleo. Here is the link: https://amzn.to/30x1hF4 I will update my post. Thanks for reminding me to do so.

    Hi- I would love to try this. I am allergic to anything coconut. It says “optional” . Should I substitute something else or skip it? Thanks!

      Hi Elizabeth! I’m so sorry about your coconut allergy. Absolutely leave it out! I only add it for more health benefits. Sometimes when I’m in a hurry I leave it out also. Hope you enjoy!

    I made these this morning and I must say I was very surprised how delicious they are!!! Easy to make…especially if you warm your almond butter a tad in the microwave to make it a little easier to spread into the mini muffin cups! So much better than the processed Reeses’s Peanut Butter cups in the store! Just a perfect little “healthy” treat!

    Hiiiii ?
    I made these today, but only got 12 out of the 10 ounce bag of chocolate ! Maybe I put too much in bottom of muffin pan liners!!
    My chocolate was hard to get into liner!
    What is the trick?? Ha .. maybe I wasn’t patient ! I’m not too crafty /creative!

      Hi Kristen,
      The first time I made them, I did the same thing. The trick is not to put too much chocolate in the bottom or on top. A thin layer is all you need. Just enough to cover the bottom, add the almond butter, then a thin layer on top. Just enough to cover! Hope this helps! Practice makes perfect! If the chocolate starts cooling, you might need to heat again.
