Oh, how I love Mexican food. Steak Fajitas was always one of my favorites. Since going AIP Paleo that was impossible when going to a restaurant. The first time going out after starting AIP, I was in tears. 

So after going through the elimination phase for a couple of years & was successful in reintroducing peppers & tomatoes, I decided to give Steak Fajitas a try. I, of course, made them Paleo. They are so good! I finally got my fajita fix! And I love that I can control the ingredients. 

 

 

Ingredients:

  • 2 grass-fed ribeyes or flank steaks ( I used a ribeye) about 1 lb. sliced into thin slices (makes about 4 servings) (could also use organic chicken)
  • 1 red or yellow organic bell pepper & 1 green organic bell pepper cut into slices
  • 1 organic yellow onion cut in 1/2 & sliced
  • 2 Tbs. Organic EVOO or Avocado Oil
  • Sea Salt
  • 1 pack of Siete Tortillas (leave off for Keto, sub lettuce wrap instead)

 

Optional:

  • Organic shredded lettuce
  • Chopped/sliced organic avocado (or guacamole)
  • Salsa
  • Chopped organic tomato
  • Organic Cilantro

Paleo Fajita Seasoning:

Tools Needed:

Siete Tortillas

Directions:

  • Mix all seasoning ingredients & add 2 Tbs. per lb. of sliced steak & 1 Tbs. Oil to mixing bowl. Mix coating well & let sit until ready to cook.
  • Add Bell Peppers & Onions to Large Mixing Bowl & mix.
  • Heat black iron skillet or griddle to med. high heat (I have a griddle on my stove, love it)
  • Add more oil (I like this spray) to the skillet or griddle. Enough to coat about 1 Tbs. 
  • Add steak stirring until brown on each side. A couple of minutes.
  • Add peppers & onions & cook stirring just until crisp-tender. A couple of minutes.
  • Remove from heat & take Siete tortillas & heat on each side for just a few seconds. 
  • Serve (see serving suggestions below)

 

 

Serving Suggestions:

  • Homemade Guacamole
  • Organic Sliced/Chopped Avocado
  • Organic Shredded lettuce
  • Organic Chopped tomatoes
  • Organic Cilantro
  • Salsa
  • or just as is
