Something about the Holidays that make me want to have cranberries. I love them in my Roasted Cranberry Sweet Potatoes that I make every year at Thanksgiving. Also in my Paleo Cranberry Chicken Salad. I make this using leftover turkey during the Holidays too! So Good!
Cranberries just make it more festive. It’s such a pretty dish & the cranberries add just the right tartness & the maple syrup adds just the right sweetness. I hope you love it & it becomes one of your family traditions.
These Roasted Cranberry Sweet Potatoes are a healthy & delicious alternative to Sweet Potato Casserole. I hope you enjoy them as much as we do.
Ingredients:
- 3-4 Chopped Organic Sweet Potatoes
- 1/c. fresh organic cranberries or 1/2 c. dried organic cranberries
- 1-2 Tbs. EVOO or Coconut Oil (melted)
- 1 -2 Tbs. Maple Syrup or to taste (depends on how sweet you want it)
- 1 tsp. organic cinnamon
- sea salt to taste
Tools Needed:
Directions:
- Preheat oven to 375*.
- Chop Sweet Potatoes
- Add Potatoes, Oil, sea salt, cranberries, cinnamon & Maple Syrup to a Large Bowl. Mix
- Pour mixture into casserole & bake for about 30-40 min. Stirring occasionally until browning.
Tips:
- Can sub chopped Apples instead of cranberries or can add both.
- Garnish with Rosemary for an even more festive dish.
