Since reintroducing eggs from the AIP diet where they are restricted, cooking Hard Boiled Eggs in the Instant Pot has been the greatest thing since “sliced bread” (grain-free of course).
Hard-Boiled Eggs are so versatile and nutritious. My husband likes to have them in the fridge for a quick grab-n-go breakfast. They are great for an afternoon snack or protein after a workout. One egg is around 75 calories with 5 grams of fat, 7 grams of high-quality protein, a good source of potassium, Vitamin D, B12, & B6.

My daughter loves Egg Salad. It is so easy. I just chop up a few eggs & mix it with my Homemade Mayo or Primal Kitchens Mayo (if I’m too lazy or out of my homemade mayo) & sea salt. She loves it for breakfast or an afternoon snack. Also, another of her favorites is deviled eggs!

Cooking hard-boiled eggs in the instant pot is the easiest way I have ever cooked them.
I was the worst at overcooking them, letting the water boil dry & then because we use farm fresh eggs, they were so hard to peel. No More with the Instant Pot. It is so easy! If you don’t have an Instant Pot, this & making bone broth alone makes it worth the cost! Get it here at a great price!
Ingredients:
- 1 dozen pastured eggs
- 1 cup of water

Tools:
- Instant Pot
- Egg Rack (I love this!)
- Large Bowl
- Tongs

Directions:
- Add 1 c. of water to Instant Pot
- Put the bottom rack in Instant Pot
- Add eggs to bottom rack
- Put the top rack in
- Add eggs to the top rack
- Close lid, turn the knob on top of the lid to sealing & set to Manual for 5 min. (less if you don’t want hard-boiled)
- Fill a large bowl with ice water
- When Instant Pot is done, manually release pressure (be careful of the steam)
- Use Tongs to remove eggs & place in the ice water
- Let sit for a few minutes then peel (you will love this part!)

This is by far the easiest way to boil eggs, especially farm-fresh eggs. They are so hard to peel when cooked the conventional way. This method is so much easier! I use to dread it. Not anymore!
