Since reintroducing eggs from the AIP diet where they are restricted, cooking Hard Boiled Eggs in the Instant Pot has been the greatest thing since “sliced bread” (grain-free of course).

Hard-Boiled Eggs are so versatile and nutritious. My husband likes to have them in the fridge for a quick grab-n-go breakfast.  They are great for an afternoon snack or protein after a workout. One egg is around 75 calories with 5 grams of fat, 7 grams of high-quality protein, a good source of potassium, Vitamin D, B12, & B6.

My daughter loves Egg Salad. It is so easy. I just chop up a few eggs & mix it with my Homemade Mayo or Primal Kitchens Mayo (if I’m too lazy or out of my homemade) & sea salt. She loves it for breakfast or an afternoon snack. Also, another of her favorites is deviled eggs!

This is by far the easiest way to boil eggs, especially farm-fresh eggs. They are so hard to peel when cooked the conventional way. This method is so much easier! I use to dread it. Not anymore!
