If you have been reading my posts you know that I have been preserving a ton of okra from my Dad’s organic garden. I have cooked it, canned it, fermented it, frozen it whole & frozen it for frying.
Okra has so many health benefits from controlling blood sugar, reducing cholesterol, preventing constipation, preventing & controlling asthma, reduces sore throats to boosting the immune system & many more. It is packed full of Vitamin A & carotenes that help with vision, Vitamin C and minerals such as magnesium, calcium manganese & iron. Read more about Magnesium deficiency here.
Knowing all this, I wanted to preserve this wonderful vegetable so that we can eat it all winter long.
What you need:
- Okra (enough to fill at least 1 qt ziplock bag)
- Knife
- Stainless Steel Bowl
- Colander
- Bpa free Quart Freezer Bags
- Sheet Pan(‘s)
- Parchment Paper (optional)
Directions:
- Preheat oven to 350
- Wash Okra & drain in a colander
- If freezing for frying cut off both ends & cut into bite-size pieces. (about 1 in)
- If freezing whole trim stem end leaving the stem intact
- Put okra (cut or whole) on a baking sheet lined with parchment paper (makes for easy cleanup)
- Put in the oven for about 8 min.
- Remove from oven
- Let cool completely
- If freezing cut okra for frying you can go ahead & put it in the large stainless steel bowl & coat with flour. (Since we are paleo I used tapioca starch) You don’t have to put flour on the okra before freezing but makes it so much simpler for future use. If you don’t put flour on it you can use in soups & gumbos.
- I do a little of both. You can also freeze it in a single layer on a sheet pan & put in bags when frozen. This keeps it from sticking together & you can take out as little or much as you want.
- If you are freezing it whole (for grilling, baking or pan-frying in a black iron skillet, put in a freezer bag. Remove as much air as possible & put in the freezer.
